A perfect introduction to the fashionable rhum agricole style—in which rum is distilled from fresh sugarcane instead of molasses—Se Mettre Au Vent is crafted in traditional column stills with cocktails in mind. Herbaceous, grassy notes give way to tropical fruit and sweet vanilla for a white rum that is almost dangerously drinkable.

Rhum agricole is fast becoming a favourite of bartenders worldwide, and we invite you to discover exactly why. In contrast to traditional rums, which are distilled from molasses created as a byproduct of the process of sugar manufacture, the Francophone Caribbean speciality of rhum agricole distils pure sugarcane juice. The result is a mouthwateringly freh beverage, with distinctive grassy, herbaceous aromas and more intense tropical fruit. It is these unique qualities which have led to the widespread adoption of the spirit in classic rum cocktails – directly leading to the establishment of Rhum St Barth. This distillery was founded by Severine and Mikael Silvestre in 2010 on the island of Guadeloupe, in the heart of the Caribbean, with the express purpose of supplying expert mixologists with the ultimate cocktail rums. Se Mettre Au Vent is a white rhum agricole which hits the sweet spot of 44% alcohol by volume – enough to still be tasted in a mixed drink such as rum and cola, but not too much that the alcohol becomes overpowering and the spirit loses its character.
This will be incredibly fresh on the nose, with intensely floral top notes as well as banana-led tropical fruit, combined with the unique herbaceousness of a rhum agricole. On the palate, this will be mouthfilling and full-bodied, with the papaya, Gros Michel banana and ripe mango flavours sitting harmoniously alongside a distinctive minerality. The finish will be long and dominated by vanilla, adding lift and spice.
To really bring out the ripeness, try this in a banana daquiri – blend together a double measure of Se Mettre Au Vent, a shot of banana liqueur (we recommend Antica Banana Sambuca), a dash of lime juice, a whole banana and ice, before straining into a highball glass and adding a garnish (Luxardo maraschino cherries work well here). Or if it’s freshness that you want to emphasise, mix with lime, sugar and mint and pour over ice before topping with soda to create a delicious mojito.
